I haven’t been to a Halloween party in years. I was actually looking forward to digging out my disco outfit again, thanks to amazon. It would be great to see the host’s new apartment too, especially their fancy terrace. The party was going to be small and the only request was that we bring food that was scary looking. After all, it was a Halloween party.

I picked up some sweet potatoes and beets at my farmers market that morning and went home to create my scary dish. I thought roasting sweet potato ‘fingers’ with bloody red nail polish would be perfect! Easy to nibble on at room temperature, and should look creepy enough. It’s also super healthy. Sweet potatoes are high in vitamin A, and packed with fiber, and potassium. They are so easy to roast and taste like candy. I usually eat a handful before they make it to the plate.

Beets are also high in vitamin C, fiber, potassium, and manganese. These tasty ‘fingers’ might look scary, but they will be bursting with benefits.

At the party that night, I had the perfect seat by dessert table. The plates were all clever looking and I couldn’t wait to sample a few. Just as I was spooning the mini chocolate parfait into my mouth, I overheard that it was made with Cool Whip! Talk about scary!

Cool Whip was created in the 60’s, and although I did have on my disco outfit, I had to draw the line somewhere. Here are some of the hair-raising ingredients:

Hydrogenated vegetable oil, high fructose corn syrup, sorbitan monostearate, (a chemically-derived substance commonly referred to as “synthetic wax”), sodium caseinate (a dairy derivative linked to autism, brain malfunctions and allergies) and polysorbate 60, (chemically-derived emulsifier used in foods and beauty products, linked to organ toxicity and diarrhea). Pretty scary, right?

I meandered over to my plate of sweet potatoes, and nibbling one, gazed at the fabulous city view from the terrace, feeling content.
